Fried chicken tenders topped with provolone cheese and Chipotle Mango Coleslaw on a fresh whole grain bun will have you asking for seconds! The perfect light summer meal to enjoy with friends.
Ingredients:
Whole Grain buns
Provolone cheese slices (one per sandwich)
Fried chicken tenders (one large chicken tender, sliced in half the long way...Publix chicken tenders are delicious!)
Coleslaw:
1 bag shredded cabbage
1/2 red onion, diced
1 sweet red bell pepper, diced
1/2 cup Chipotle Olive Oil
1/4 cup Mango White Balsamic Vinegar
Coleslaw Preparation:
Combine the Chipotle Olive Oil and Mango White Balsamic Vinegar in a bottle or covered dish...shake well to fully combine the flavors. (You may adjust the amounts of the olive oil and balsamic vinegar per your taste.) Combine the cabbage, red onion, and red bell pepper in a bowl. Pour the Chipotle Mango Vinaigrette over the cabbage mixture and toss well. Place chicken tender(s) and a provolone cheese slice on a bun, and top with the Chipotle Mango Coleslaw. Enjoy!
