Farro is a wonderful side dish (or main dish) for a light summer meal. This wheat grain mixed with vegetables, beans, olive oil and balsamic vinegar is so delicious you will want seconds!
Ingredients:
1 cup Farro, prepared according to instructions on the package
1 cup broccoli florets, chopped
1 cup tomato, chopped
1/2 cup red onion, chopped
1 can black beans, drained and rinsed
4 tablespoons California Arbosana Extra Virgin Olive Oil
4 tablespoons Traditional Aged Balsamic Vinegar
Preparation:
Prepare the Farro according to the instructions on the package. Meanwhile, chop the broccoli, tomato, and onion. Drain and rinse the black beans. Once the Farro is done, move to a mixing bowl and add the broccoli, tomato, onion, black beans, olive oil and balsamic vinegar to the Farro and mix well. Enjoy! Serves 8.
