The deep yet mild heat of the Chipotle Extra Virgin Olive Oil gives this chicken a whole new flavor.
1 cup Chipotle Extra Virgin Olive Oil
4 tablespoons garlic, chopped
3/4 cup cilantro leaves, coarsely chopped
2 tablespoons ground chili powder
salt and pepper to taste
1 roasting chicken, about 3 1/2 - 4 pounds
To make marinade, whisk first 4 ingredients together. Add salt and pepper to taste. Refrigerate until needed. Wash and dry chicken. Thoroughly rub whole bird with Chipotle marinade, cover, and put in refrigerator for at least 8 hours or overnight. When ready to roast, remove chicken from refrigerator. Preheat oven to 375 degrees. Roast 1 1/2 to 1 3/4 hours, or until internal temperature registers at 165 degrees.
