Chicken Salad

The unique flavor of Tarragon Olive Oil and Sicilian Lemon Balsamic Vinegar make a delightful chicken salad.


4 cups baked or poached chicken, pulled apart
1 large red onion, diced
2 to 4 tablespoons Sicilian Lemon Balsamic Vinegar
1/4 cup Tarragon Olive Oil
3 to 4 scallions thinly sliced
minced Basil, Tarragon, Cilantro, Thai Basil,  or Mint (use to personal taste)
freshly cracked black pepper

Whisk together the Tarragon Olive Oil and Sicilian Lemon Balsamic (use amount of balsamic to personal taste). Stir in the red onion, and let sit while you prepare the chicken, scallions, and desired herbs. Toss all together & serve.
